How it’s made: Bamboo Sticky Rice

A local bamboo sticky rice dessert lesser known to the tourists but more famous among the primitive living in rural areas of Thailand.
We are sure that most of you have probably heard of Mango Sticky Rice, a famous Thai dessert, before. But do you know that there are many other Thai desserts based on sticky rice? And they are equally drooling. So, today, we are taking you to learn about one traditional dessert dish that we often make here especially in the winter season. And that is the Bamboo Sticky Rice which basically is sticky rice and coconut milk in bamboo!
For the past few years, we make it at our farm once a year to celebrate the end of the harvest season with the city kids who join the rice harvest camp around the end of November or early December. It’s the comfort food for the winter because the stuffed bamboos are burnt in the open field. The warmth of the fire is mixed with the aromatic cooking smell of the rice and bamboo. As the kids were enjoying the cold winter weather, singing their favorite songs, they are looking at the campfire and have a good time eating the warm bamboo sticky rice in the morning.

Ingredients
1) bamboo stick
2) sticky rice soaked in water overnight
3) sugar
4) salt
5) coconut milk
6) sesame or beans (optional)
Instructions
1) Cut the hollow part of a bamboo stick to approximately 1-foot in length, Clean the inside and outside. Let it dry overnight.
2) Mix coconut milk with sugar and salt (adjust to your liking). Wait until the salt and sugar are melted.
3) Mix sticky rice in coconut milk. Add sesame seeds or beans if you’d like.
4) Stuff the sticky rice in a clean bamboo stick and close it with tied banana leaf.
5) Alight the stuff bamboo stick on open ground. Add wood and charcoal.
6) Set up the open fire. Fan the flames from time to time.
7) let it burn for a few hours and it will be ready to serve.
